Seriously, you have the plum wrong. The plums we get here are often those big watery things with little taste. But cooked, plums are the king of stone fruit. And so ephemeral. You make plums when the plums are ready. My grandmother would make plum dumplings every year out of those Italian prune plums. I expect them any time. Probably three weeks.
Look for them. Italian prune plums. They will only be around for about a week and a half. Buy a few. eat them. They are little. About two bites each.
