Without getting too far into breeding and genetics, usually when you buy seeds from a breeder you are getting something called an F1. The breeder has a pair or a population of parent plants that always 'breed true'. That their seeds grow plants that have the same characteristics, they are all of the same phenotype. These are the sells you and you expect to get a bunch of plants that are pretty much the same. However, if those F1 plants are inbred with each other to produce an F2 generation, recessive characteristics will emerge and there will be a variety of phenotypes. This means that you cant plant those seeds you made and expect to get plants that are all like their parents.
Understanding why it is that the parents can breed true but their offspring may not requires a bit of genetics but it's not hard. There are several articles on RIU
There are breeding techniques to start with an F1 population and stabilize it so that only one phenotype appears but it takes at least a few generations
This doesnt mean its not worth making seeds, but you cant expect to produce copies like you could if you were ripping off a CD
