If the guy at the hydro store is telling you to run nutrients for 5 days and plain tap for 2 days.. then switch back again.. I would go to a new hydro store as that IS actually stressful to the plant.
There are very little "excess salts" in a well run hydro set up, but you can occasionally remove a little salts out of the flood and drain systems by flushing. As stated above, unless your over feeding, flushing is not really required and it indeed can be stressful on the plants. Is it going to hurt the plants..no. Is it going to help them? no.
The key to high quality green is slow and steady. Nice gentle ramp down of nutes in the last 2-3 weeks. No need to do anything ridiculous. The smoothness of smoke is mostly in the drying anyways.
