Gonna be making buffalo chicken chip dip today or tomorrow. If you haven't had some version of this yet, you must. A pack of boneless breasts slow cooked in a charcoal grill with just the right seasonings, shred it up then heat in a pan with the buffalo sauce, mozzarella cheese and hot sauce til creamy. Grab a bag of Tostitos scoops and welcome to heaven. =}

I love mushrooms just about any way.

Take some diced onions, diced peppers (any kind, I use a combo of sweet and hot), shredded carrot, corn cut from the cob, any ratio you like or any other vegetables you like.

I start with a little oil, I use a wok but a cast iron skillet works good to. Heat the oil and add onions and fresh minced garlic. I add my other vegetables and reserve my mushrooms for last.

I fry on high heat, my wok is seasoned. A well seasoned cast iron skillet holds up to the high heat.

As it is cookin I put soy sauce in it. As the moisture evaporates and it acts like it wants to stick I add a little bear, like 1/4 cup. I do that several times.

I like to marinate the big portobello's in olive oil and balsamic vinegar. Then throw them on the grill real quick like. Toasted Ciabatta bread with pesto, a slice of a homegrown tomato, feta cheese, and arugula. Tasty as fuck!
