I've purchased roasted Hatch chiles from a company called 505 Southwestern (I think?). One of my favorite toppings for scrambled eggs or inside a quesadilla.We did practice on a few of the others while waiting on the Hatch to get ready. Making sure the peppers are dry before roasting is key. If it looks like you are burning them, you are doing it right.
