It depends on how its stored, of course. The drier it gets, the less aromatic and flavorful.
The terpenes are all aromatic hydrocarbons, and the mono terpenes readily sublimate away far below their boiling points, which is why they can stink up everything around them, even double bagged.
The mono-terpenes sublimate away with the water and the essential oil extract becomes less aromatic and tastes more phenolic, because the majority of the essential oil is the diterpene fraction, aka the cannabinoids, which are phenolic terpenoids.
Floral, piney, citrus, etc, are C-10 monoterpenes and C-15 sesqui-terpenes. The C-30 tri-terpene flavonoids will also be present, and add some flavor, but not much in the way of aromatics.
Also of consideration is the color. The C-30 anthro cyanin plant pigments darken as they breakdown with age, so the same material extracted at drying day 90, will produce a noticeably darker concentrate, than when prime at about day 5/7 properly hung and dried.
Oxygen and UV both break down the terpenoids, so the best way I've found to store material is either fresh frozen for live extract, or dried to jarring moisture levels before bagging and freezing.
Bagging, vacuum purging, and nitrogen back filling will eliminate most of the oxygen, iff'n ya'll don't have freezing capacity.
Keep it in a cool dark place and if you aren't going to freeze it, you will have to dry it at least enough to prevent molding.
