What kind of move? The pack-everything-up-and-drive-across-the-country-for-two-weeks kind of move, or just across town? If you're just going across town, you could probably harvest right before you move, hang the plants upside down in a garment box and get them into the new place. Don't do the full dry (I'm assuming you're doing a slow dry of a week to 10 days) in the garment box, just use it for transport because the cardboard is treated. But a short move across town would be fine.
But if you're taking a few days to drive somewhere, you're going to have to be done with hanging and everything should be trimmed and jarred. You can keep an eye on the jar's humidity with a hygrometer and open the jars when needed to prevent mold.
