No cheese. It's the inside of a fresh gordita , cut with a serrated blade . But delicious nonetheless .

Never had a corned beef omelet and I have some leftover that I need to use. I have some green onions and mushrooms and perhaps a mix of sharp cheddar and pepper jack. Sounds edible to me.
