A trick I earned from Mom, you can pour hot bacon grease into a mason jar for storage in the fridge if you put a butter knife in the jar before pouring the hot grease. It distributes the heat and prevents the jar from shattering from thermal shock. It's best to strain it, but I don't mind some crunchies in it.

Mom used to make schmaunt fat (cream & bacon grease) to put on werrennikje (pierogies) or mashed potatoes. So good.

Why does that sound so good... yet never heard of it. Looked it up, sounds and looks really good. Must make soon.

The pierogies I was raised with were not uniform in size and were filled with dry cottage cheese. They were boiled and consumed with cream/bacon grease gravy. Leftovers were pan fried in butter. I miss her cooking and baking. She made the best cinnamon buns.

I just checked out a new large Polish supermarket in town. They got literally dozens of different types of pierogies, frozen and fresh section. Got a bag of deep fried pierogies that include pork and beef. Surely nothing like traditional homemade but figured I might as well try out the concept. Package says they‘re handmade so size and shape may vary.

I almost legit drooled looking at the cold meat cuts... Dutch supermarkets are such rip-offs, ham/turkey/chicken/bacon it's like a buck an ounce for processed factory stuff. Polish supermarket they slice it on the spot for a third of the price. It’s going to be good summer eating at the riverside.

Also noticed this attractively shaped bread.

I've been on low carb so long I would kill for garlic bread hot out of the oven slathered with butter, (and buttered noodles, and a whole plate of mashed redskins, and pecan pie, and cinnamon rolls...) [sighs and drifts off into a mentally induced glycemic overload]
For all the health issues I have I’m so thankful that “ the sugars “ ain’t one of them. Also really happy that gluten intolerance isn’t an issue. I don’t know what I would do with out bread in my life. I’ll eat an extra piece every so often just for you…. kinda like pouring one out for my homie’s.

I've pored hot grease into many-a mason jar with no issues.
Pull it outta the fridge & dump it out of the skillet & on top of the solidified stuff.
