When I dry I usually like the temperature to be cool since fast drying removes the flavor from the buds, the slower the dry the better the flavor in my opinion. I also make sure there is proper airflow to prevent mold. You can achieve this with a small fan in your drying area, just make sure it is not blowing directly on your buds. I also prefer to hang the plants upside down while drying as it preserves their shape. On that note, I leave the leaves on when drying as I find them to help hold the flavour in. Your buds are dry enough when their stems snap easily.
As for curing, I do my final manicure then place the buds in a canning jar or some 420 jars and leave them closed for at least 8 hours. I then open the jars to allow the moisture escape if there is any. I repeat this process until I am sure it won't grow mold while in storage. Properly cured buds will snap when broken in half, burn evenly with a nice red ember, taste is void of chlorophyll (grassy taste), and smoke is smooth on the throat.
Granted, some strains have thicker smoke which makes you cough, such as Strawberry Cough. This is a characteristic of the strain, not improper curing. Also not properly flushing affects this as well.
