A real taco is just Mexican street food. Usually on a soft corn tortilla but you can do either flour or corn most of the time. They usually do shredded beef (barbacoa) ground beef (picadillo), pork (carnitas, al pastor, green chili pork), fajita beef or chicken, fried whitefish (fish tacos from places like San Diego) and then top them with cilantro and chopped onion. They make a bunch of different salsas, either tomato or avocado or tomatillo based. There's a million variations of these with all kinds of crazy shit.
