Tips on harvesting a nanner plant

So yesterday I finally removed my struggling plant from the grow room, which upon further inspection turned out to have quite a few bananas. On 3-4 colas. Some of the side coles have also been pollenated and have started the production of seeds.

The plant is 52 days old but it was nowhere near harvest-ready. At least 60% od the pistils are white, i'd say average level of trichome production for this stage of development.

I doubt that getting it back under lighting is a viable option, so my question is, is it worth leaving it alive for a little while longer or will it just continue to solely focus on producing seeds?
And if I chop it, I understand the end product is gonna be subpar to put it mildly, but is it worth drying and curing for some edibles or an extract?

Any advice, input or an opinion on what you might do in this situation is welcome.

PS: I do have another plant in the flower room which I would guess got pollenated in the process. It had roughly betwee. 20-25 days left, could that time be enough to get a bunch of seeds on it?

it will still grow and produce seed at the same time, although slower then usual. it takes seeds 4-6 weeks to fully mature

It will keep ripening but don't put it in a room with any others. The other plant I would run and just wait and see. If it gets nanners, pluck as you go, that one will make it.

Over the years I've have had many plants grow a few nanners, 5/6 weeks in flower, its not great but there unlikely to effect other plants, I see a large fat cola full of good quality bud and one or two seeds, its self pollinated a small part of the bud.
Its very different from having a male in the room or a full out hermie 2 weeks in flower.

The update in the situation:

The nanner plant lost most of it foliage, but after inspecting it hard and removing bananas from 3 colas, I got it back into the flowering room at a fair distance.
The healthy one doesnt seem pollenated (yet) and I'd guess that even if it does at this stage its too late to make a difference (week 6 of flower).
