I'd braise it first.... cook it for 5-6 hours in the oven, with a fuck load of fat.
Then smoke it for 8 hours... lol

Ended up making a soup/stew thingy out of left over brisket , chucked it in the cast iron camp oven
with some , onion , cauliflower , potato , left over roast chicken from yesterday , parsley , bay leaf , a little paprika , salt n pepper ,
oh yeah and some chopped cos lettuce with heaps of water , turned out a treat !
I cooked it for 13 hrs , i had to keep burning wood on the fire to supply the hot charcoal to cook it .
Hot charcoal layed in a hole , then camp oven sits on top , cover sides and top of lid with charcoal .
Then buried with top soil from the hole i dug .

That's some insane dedication for a pot of soup! Looks goodOnly kind of soup i'd put that much time into would be for a pho. although would love to have a crack at cooking meat that way, saw it on bizarre foods and though mmmmmmmmmmmmmm
