What's For Dinner Tonight?

Yes... about an hour ago... I got up late. I had scrambled eggs with lots of onions mixed in.

Man, we had a storm and a half last night. My big dog is really scared of thunder.....a rescue dog.....we got her when she was already 9.... so I'm assuming she had some close calls left outside before. It was a real light show.... and about 3 we had a direct hit somewhere very close. i went out to find the tree, but so far...no luck.... we have so many it's hard to find.... gotta look for the stripe running down the tree and bark on the ground. If you are lucky and can find the strike point in the ground.... there may be some glass formed...always kewl to find...but I've only found one in my lifetime.

It stormed here as well. My little dog is scared of thunder but he never was until after he got shot at in a home invasion robbery 7 years ago. I think he relates it to that gun shot noise.

That'll do it to them for sure. Mine was shaking like a leaf.... a 100 pound leaf. The crazy thing is...if anyone cracks the outside doors open...she runs outside into the storm.....

fish talk :O i can get involved with that! only way to fillet a flounder is from alive. we often get all kinds of fish still live and kicking coming through the door.

i must say one of my all time fav cheap fish is grey mullet. it's bloody £5 a kilo, and is pretty much knocking on wild sea bass's front door. i mean £5/kg or £29.50/kg, it's crazy, and so freaking good, i like to marinate it in soy sauce chilli garlic and some spring onions for a few hours and then straight on the grill :) got myself some cocktail sausages tonight! they are 61% pork, mmmmmm, mmmmmm, mmmmmmm, not pleasant

I wonder if that is the same Mullet we have.... same family perhaps.... down here.... we usually only smoke it...

I was sailing a few years ago down in the BVI (British Virgin Isles) and we anchored in this little cove, where there was only a small restaurant and beach. We arrived about 2 o'clock so my nephew could enjoy the sand and we could hang out and watch and relax. My Brother in law and I go up to the restaurant and find out that they will be having lobster for the main specialty that night and we had to reserve them ahead of time. Nothing was under 2 lbs., but we both picked a 4 pounder, just because...

So a little later as we were walking on the dock back to out zodiac there are the lobsters in a cage tied off. They split their tails lengthwise and then put them in the cage....still alive. I was surprised at this, but my B.I.L. informed me that was done to sweeten the meat. Boy was he correct. Not only was the lobster IMMENSE...it was some of the best I have ever tasted.
Man, we tied one on that night too.... lots of music, drink, atmosphere, food, and complete privacy. I swam back to the boat at the end of the night just to clear my head...

well mullet can be many thingsm i mean there is red mullet and grey mullet. both some of the best fish around, yet not related at all.

the fact that you thought it was the best lobster you'd had surprises me. i work a lot with the michelin star resteraunts and kitchens in london, whenever a customer goes wild and said i want that big mother fucker right there, it's all siles and good choice sir good choice, but moment the customer is gone, the entire kitchen will just start laughing their faces off that someone has just ordered a 5lb lobster for £120, we all find it absolutely hilareous, at that size the flavour and texture tends to be plain wank, certianly still lovely, but wank in comparison to a sweet suculent 800g job.

Yah, I know the story about weight... I have had them all. I should have said best tasting, instead of just best. Nothing beats a cold water bug. It was the salt water split tail technique which made the difference.

From then on, I always cook with salt water not fresh for my lobster. It makes quite a difference in taste.
