Wife had the early shift so I had to make my own sandwich. Scrapple egg and cheddar on everything bagel. Scrapple sliced thin and fried crispy. Weighs 8.2 ounces

IN the sauce I put 1/2 of a green, red, orange, and yellow pepper. 5 cups or so of fresh spinach, 2 onions, 6 garlic cloves, and a can of diced tomatoes in juice.
I simmered that unit the veggies were soft and I added my spices. Garlic, italian seasoning, cayenne, chilli flakes, basil, salt and pepper. Then I added 2 cans of pre-made tomato sauce.
Simmered the whole thing for about an hour, and then added a bit of brown sugar and some cream.
I cooked the ground beef with onions and garlic and some smoked paprika.
No ricotta cheese for the innards, but I used cottage cheese because that's what I had.
Then I BUILT it. Layers, and I added shredded mozzarella, cheddar, swiss, and fresh parmesean.
Baked it for an hour covered, and then 20 mins uncovered at the end to crisp up the top.
Daaaaaaamn, it was tasty!
My next man will definitely benefit from my blowie skills. I often give blowie dessert. I'm cool like that...
