Pilau rice all made up. Tastes miles better if you let it sit overnight and reheat. In fact I find it’s imperative to get that proper taste.

Spices are: green cardamom, couple cloves, bay leaf and cassia bark (cinnamon bark, not sticks)

Cook on a very low heat. Then add rice once oil is infused. Fry the rice to seal the starch and flavour in. Just before the water is added salt and a pinch of sugar was included. The sugar helps the bitterness of the spices and makes the rice very moorish. Only half a tsp for about 4-5 portions. Don’t want it sweet.

I’ll make the base sauce either later today or tomorrow morning.

for all the wine peeps here, do you know if this is available in bottles here in the US?

we did a trip over to germany many years ago in the early fall and this stuff was everywhere.

federweisser (white feather). first press of the grapes apparently. i looked for it and one wine guy said that it didn't ship well since it is basically still fermenting in the bottle?? not sure about that though

Went across the border into Germany again to stock up on French, Italian, Spanish and Chilean wine, so it made sense to go to a German fast food place. Never noticed it before, they should put like a mascot outside, maybe a clown or something. The closest alternative was a non-Italian restaurant selling pastas and pizzas… I went with bratwurst from a burger place instead. In hindsight probably not the best decision ever, at least the other place sold wine and beer. It was ’ok’ though.

We took a different road, through a small dutch border town that seamlessly connects to a German town. For Germans there’s a coffeeshop on the dutch side. For Dutch there’s a wine and liquor place on the German side (roughly 30% cheaper cause of high tax in NL, but can import max ~100bottles wine tax free). Not a unique situation but these two are only 500 yards apart.

you ever been to one of these in Belgium? there used to be one that we had to drive by on one of the highways. was a pretty tasty burger and fries.

I heard of it before but never been there. Been a long time since I went to Belgium instead of through it. At least 25 years.

well, damn, a trip to Deutschland is in order then.!!! between that and the Kolsch in Cologne, that was a fun trip (pre-child too)
Cologne is very high on my list. Maybe this winter. It’s less than 3 hour drive.
