IMHO trust is a most critical element of a successful relationship.
We just celebrated our 25th - it simply would not have happened with out mutual trust and a huge dose of undying love.

Why the guise of playing a game on her phone with the intention of looking through her personal information? I know you didn't bring that up, it was someone else, but still. Would you ever ask "honey, can I read your text messages?"? How do you think that would make her feel? How would that make you feel if she asked you that? Like she didn't trust you right? I think it would be a little more than "oh she's just curious, why not...". I don't think it has anything to do with having anything to hide, it's just a matter of boundaries, space. You have to maintain independence even though you may be married and especially if it's only a girlfriend. Just my opinion anyway.

Its all a game that we all choose to play, all it takes is understanding and believing what you want, i have had a great many beautiful and talented special women in my life, had my own doubts (of infidelity,dishonesty), i had convinced myself what i wanted to believe, which led to my separation from the relationship(s), all i am saying with this is no matter how good you have it no matter the person you are with, your own thoughts will overcome what you are being convinced of, follow your heart and let go of hurt and my friend everything will be just fine. as for the lovely lady OP, do what you feel is right, no one is going to convince you of anything you are unwilling to accept.

what if, instead of communication you tried a mutual code of silence w/ rules & regulations. Just One great Big Calendar on the wall with the specifics on life you know, work schedules, girls night outs, the times you'll be home.. when bills are due. the small things in life.. So that way when you're @ home you can stick to strictly love making, cooking, sleeping, watching tv, playing CoD on xbox, practicing kick-boxing in case she breaks the rules & regulations.
