    Nitrogen toxicity?

looks more like overwatering, super saturted root zone than N toxicity. N toxicity you will usually have very dark green foliage first

    having some problems here..

well the premature yellowing is a sign they are hungry. since you dont want to use nutes, I cant help u. organic nutes at this point will take awhile to take affect. so what's some diminished yield.

good rule of thumb is to start very light nutes when the cotyledons beging yellowing-these leaves are their primary food source for first couple weeks of life similar to an egg sac that surrounds the yolk

Q about roots in my Ebb n Flow setup

the small white hairs emerging from the main taproot(s) are feeder hairs. they are very fragile. yes they look exactly like mold all white and fuzzy but not very likely is mold. yes they will disolve literally in your hands. once the plant matures a bit, they will not look like this again.

    Droopy Plants

I agree with the overwatering analysis. from the pics, the plants look very healthy and happy besides the overwatering. I would be concerned however that after a month of flowering, there are not more pistals and bud sites, however that can be attributed to their young age put into flowering...
