Will you be using a system to automate feedings? I only ask because 1 gallon pots will require several feeds per day once the plants get large, probably 3 at a minimum, but since that mix is so light, you might need 5 feeds. I usually start seedlings at .8 of Maxigrow, but my current seedlings...

Is your grow room in a basement by any chance? Are you keeping your RH at/under 50% with a dehumidifier? Something fundamental has to be wrong for this to happen consistently.

I'd say, use a time tested complete formula, like GH Maxi series, and see how you do with a "low ec" during flower (around 1) before you try to push high EC or add "bloom boosters."

I'd go with 2 gal pots. You could probably get away with watering once per day if you keep the plants small. 1 gallon pots you are going to have to feed/water a lot.

I also think you're fine, but you want to check under the leaves for mites. You can see them pretty easily with a scope.

I see it with seed germination too. My seeds that just popped in 24 hours were at 82 degrees. These plants love their warmth!

You should water/feed that plant to runoff, then wait to feed/water again until the pot gets light. Right now with some wet/dry spots, it's not good-you need to thoroughly moisten your media for the roots to grow.

Yep, a matchstick box would work for sure, but I usually just roll a tube and hold it between my thumb and forefinger to block the ends. I do groups of seeds at a time, I just keep them separated by strain so I don't mix them up.
