Don't let it dry too fast. Hang it to dry, if it's drying too fast let it get a bit dry and just throw it in jars to dry slower. I don't remember how big your overall yeild was, but you can also use paper bags. They dry them out a bit slower than the hanging.
If you let them dry out completely too quicly it will burn and taste and smell like hay. Just get them mostly dry (so the stems are pretty dry and kinda "snap". If that takes 2-3 then okay, if it takes 7 even better. Just don't let them hang for 5 days and get completely crisp...slow the drying process down using jars or bags and that will also begin the curing process.
Try to get it to 7 days to dry them out however you see fit and then just start poppin' jars daily to get the cure going. Result should be a nice smooth smoke.
