I always de-bone mackerel before cooking. Small pair of needle nose pliers work best IMO... :)
It definitely would make life easier but I just leave them on for the dog, she loves fish and is almost 9 so good for her joints and ticker. I usually throw a couple on for her as well but her favourite is Salmon, her little butty tail wags llike mad when she see's some in her dish, they know what's good for them anyway.
Look great to me !!!
I'm not fussy if the mackerel is over cooked a bit, it doesn't dry out like white fish would. I try and eat at least 4 of them a week if I can get them. Meant to compliment on you on the smoked snapper, I can't get it here but I would love to try it someday

Steak sammies.... Sauteed peppers and onions, with garlic. Lots of marble cheese, and and some chipotle lime BBQ sauce. The bread is a bagette done up as garlic bread, and done in the oven. The steak was a NY strip.... ;)

That is what I call gourmet cooking:)
That looks so so good, the only addition I would make based on personal taste would be added jalapenos.

I usually mix her fish through some veggies if they are cooked, she wants the salmon and has no choice but to eat her greens etc as well.

I lived in London for years and the real jerk sauce is delicious, everyone had their own individual recipes which was great.
