You have no idea how tempting that is. I think I'm going to be making a pot of red chili this weekend. It's good for enchiladas, huevos rancheros, mexican burgers, navajo tacos, fries, hot dogs, ice cream, whipped cream, sour cream... o.k. maybe I'm exaggerating a bit.. But I'm craving chili, damn it! If I lived in Albuquerque I would be knocking on your door right now. :D

Managed to cook whilst hoovering the house, mopping, accepting my mother's stupid Facebook games requests and doing the washing up.

Don't worry, I washed my hands like 500 times between jobs and sprayed surface cleanser everywhere...

We just had 'Dutch Baby' German Apple Pancakes. It's one of the few times my husband doesn't want meat with his meal. Not hard to make either. Once again, I love allrecipes.com
 
I made mexican burgers again. I love them. Love love love.. love... LOVE them.

I made this one last night, my Greek chicken recipe:

3 1/2 pounds Chicken - cut up
3 tablespoons Olive oil
4 Garlic cloves - chopped
3 small onions - chopped
3 cups coarsely chopped fresh tomatoes
6 ounces green olives with pimento - drained
1 tablespoon oregano
1 cup dry red wine

Brown the chicken in the olive oil. Use a large pan and do not try to do the whole batch at once. Remove the chicken from the pan and drain most of the oil. Saute the garlic and onions until limp. Add the tomatoes and the drained olives and saute until tomatoes are soft. Add the pepper, oregano, wine and the chicken. Cover and simmer until the chicken is tender, about 30 minutes. Taste for salt. You should use very little as the olives are salty

I thought I had posted a pic of one earlier in this thread but I couldn't find it. You take two ground beef patties (about 4 oz) and cook them with salt, pepper and garlic. Take the hamburger buns (one per two patties) and toast them along with the patties in the griddle (make sure you don't burn the buns). In the meantime, chop up some onions and set aside. Also lettuce and tomatoes which will top the dish when you've finished cooking. Grate some medium sharp cheddar. Enough to cover both patties. Once the buns and meat are done, place the buns face on a heat safe plate, top with ground beef patties. Cover meat and buns with chili rojo (I cooked up a pot earlier this weekend) and then smother with cheese and onions. Place into a 350 degree oven until cheese is fully melted. Take out and top with lettuce and tomatoes. That is a Mexican burger. :)
