I'm kinda seeing how this could work. You need to be more unique than just crackers and cheese. Specialize in unique cheeses and add a deep fryer. Make or buy cracker dough in different flavors, I'd suggest making it yourself so you can tailor it to specific cheeses. Cut cubes of different cheeses, wrap cheese in dough and fry. You could do all the prep before you go out and just have to drop orders into the fryers. Have all the condiments mentioned for sides or toppings. With the deep fryer, your options also open up on fried cheese dishes. Poutine, fried cheese curds, mozzarella( or any other) sticks, etc. Fried cheese, fried cheese, fried cheese. It can be done high class with top end cheese, or low brow with basic cheddar and mozzarella, you can tailor to the crowd you're serving.

Don't make the trucks decoration look gaudy if you want to hit up classy places like vineyards, keep it simple and clean. Maybe have the wrap be a picture of a cheese cellar, or a fromagerie. Put a quiet exhaust on it and make sure it doesn't leak and have any bad smells. We had a lunch truck once that had leaky valve covers and the thing always stunk of burned oil. If I was on the fence about getting food, once I smelled that, I wasn't hungry. Just don't neglect maintenance. I'd try hooking up with a local big truck mechanic, maybe you could trade "catering" an event or two for them for some regular maintenance. Wash it regularly.

Here, here's the name and what I think the wrap should look like. Make any shelves outside out of wood, to look like large cutting boards. Have a small display with all the different cheeses visible.

I'd be pissed if i was on break, roll up to a food truck and all they had was cheese and crackers. When i eat too much of that it really fucks up my innards.
