I have one going myself. I'm doing a dry cure but wet or dry it turns out the same. I plan on smoking it in a week.

Nice, I have another loin in the freezer. Don't know what I'll do with it yet. But I had some bacon with eggs this morning and I love homemade. What's your recipe?

Just a simple cure recipe. Salt, brown sugar, garlic powder, and Prague #1. I guess you're supposed to use maple syrup but I didn't have any. I also don't roll it in pea meal. I guess I should call it American Back Bacon. It's still delicious and better than anything you can get from the store. Plus it's so easy to make.

Years ago I wash fishing the Nehalem river on the Oregon coast. I sat on a rock for a quick lunch of some chicken I grabbed at the store on the way. I had finished eating a leg and tossed the bone into the water along the shore. While I was sitting there sipping a beer I noticed something out of the corner of my eye. There were dozens of crawfish coming out from under rocks going after that chicken bone. I started grabbing them with my hands and ended up filling a small cooler. I didn't catch any fish but I had a boil when I got home.

They're all over in almost any body of water. We used to catch them in creeks when we were kids. A piece of baloney tied to the end of a string.

It's just plastic poultry fencing material, found some at Ace.

And that’s about all baloney is good for ;)

Chicken wing flats (they were cheap) roasted potato and asparagus, green bean & broccoli

I seen this trick on Masterchef Australia....you put chopsticks beside the potato then slice it but the sticks prevent the cut from going all the way....it looked really cool but I wasn't impressed, wouldn't do it again.
