Ya.. I do it all the time.. all kinds of pots.. I don't have any photo's of a 2 liter handy. but here is an old photo of a 1 gallon I sunk into a 2 gallon pot about half way.. you get the idea.. just cut off that bottom and go. The plant never even knows it is being transplanted (so to speak).

If they get to the wire and just need a bit more soil, cut the bottom out of the 2 liter carefully with a razor knife, and plant them deep in another pot with a few inches of soil underneath.. you wont raise em too far and have the benefit of some extra room in the final hour.. At least that...
